Hi guys, haven't thought of a different idea for too long... But, since my cousin's wife, whose birthday falls on 14th March, is really not too into food, but is crazy about fruit, I thought I'd come up with a more fun recipe. It's great when teaching kids how to assemble food in such a way that it looks just as good as it tastes and also the best thing for health freaks who don't want to eat too much dessert. Either way, I love this recipe because it is colourful, cute and appealing to the masses.
1 large pineapple, cut into half lengthwise
Any other fruits, diced or halved (Some ideas that I have used in mine are the following: 1 bunch of grapes, halved; 1 punnet of strawberries, sliced thinly; 1/2 a mango, diced; the rest of the fruit cut from the pineapple- just enough of that, a little melon, papaya and peach here and there) *
1/4-1/2 cup pineapple juice
Vanilla ice-cream/custard sauce to serve (see apple spiced crumble recipe in 'Older Posts')
1. Scoop out the inside fruit of the pineapple and slice it into small chunks for later use in the salad/any other use later.
2. Put all the fruits inside the pineapple and top with pineapple juice.
3. Serve with vanilla ice cream or custard sauce.
*Note: These fruits used above are just ideas to get started with. Just use your imagination to come up with a great pineapple boat! Cheers... :-)
